  1. In a shallow frying pan, dry roast Toor dal in low-med heat until it turns golden brown. Remove and set aside.
  2. Add the chilies and dry roast until slight color change and roasted aroma arises. Remove and set aside.
  3. Next, dry roast the pepper and cumin seeds until the cumin pops. Remove and set aside.
  4. Switch off the flame and roast the roasted gram dal for a min in retained heat and add along with other ingredients.
  5. Cool all the roasted ingredients to room temperature. Add 1 tablespoon salt (or to taste) and blend in a mixer jar to desired consistency. Coarse to smooth as per preference.
  6. For the tempering, in the same pan, dry roast (med-high heat) the mustard seeds and cumin seeds separately and add to the parappu podi. Optionally, spread the mustard seeds and curry leaves in a microwavable plate and microwave for 30-45 seconds. Mix well with the podi.
  7. Serve podi with hot rice and ghee.
