Andhra Curry powder
This is an heirloom recipe that has been passed down in my family through generations now. “Koora” means vegetable and “Podi” simply means powder. A staple spice powder in our pantry, we use this to spice up most of of our dry saute vegetable curries. The Tamil Nadu equivalent of this powder would be called as Kari podi or Kari Amudu podi.
I remember a couple of year back, my American friend J, enjoying oven roasted golden potatoes with this spice powder that I had made at her place. She even noted down the recipe and often makes batches of this powder to use in her recipes.
